A new restaurant, unlike any other around, is opening in Bozeman.

 

Feast Raw Bar & Bistro is moving into the space formerly occupied by Seven Sushi on West Kagy Boulevard.

 

Partners Steve Kuntz and Caroline Doern plan to open the combination raw bar and restaurant, specializing in dishes created from locally-sourced ingredients, in September.

 

“The common denominator is flavor,” Kuntz said. “We’re talking about a real comfort food kind of place that focuses on top quality products, and just served in a way that’s old and new at the same time.”

 

Dishes will be prepared with high quality sustainable seafood as well as local meats and produce. Kuntz explains that their vision is to create dishes with traditional roots that play with flavor in a way that takes it a few steps past comfort food.

 

Think Peruvian ceviche, Southern Italian octopus salad, Korean sushi and other traditional foods from around the world as well as dishes prepared using local Montana meats and veggies.

 

“We definitely are for meat eaters. That’s where merging comes in,” Kuntz said.

 

No exact opening date has been set, but Kuntz is setting his sights on September. In the meantime, a lot of work is going into the space that formerly housed Seven Sushi. The kitchen is being renovated and the dining area is receiving a “pretty solid facelift,” Kuntz explained, with new flooring and paint, new interior treatments and all new tables and chairs to give it a new look.

 

“We’re turning it into an upscale bistro…It’s going to have a really dramatic design element,” he said.

 

Both Kuntz and Doern have deep roots in the Bozeman food community. Both have owned catering companies. Kuntz has been in Bozeman for 20 years and has worked at Montana Fish Company and the Rainbow Ranch Lodge in Big Sky. Doern came to Yellowstone National Park 17 years ago. Their vision for Feast is based on a common desire to bring quality comfort food to Bozeman.

 

Once it opens, Feast will operate between 3 and 10 p.m. Tuesday through Sunday and will be available for private events.
